Ingredients
For Florida Orange Ponzu Sauce:
- 1/4 cup (60 ml) Florida Orange Juice
- 1/2 cup soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon lime juice
- 1 teaspoon sriracha sauce
For Sausage Filling:
- 3 pounds ground pork
- 3/4 cup chopped scallion
- 6 ounces miso
- 1/4 cup (60 ml) Florida Orange Juice
- 2 tablespoons fresh grated ginger
- 1 tablespoon minced garlic
- 1 tablespoon sesame oil
- 1 teaspoon sriracha sauce
- 2 teaspoons Florida orange zest
For assembly:
- 24 gyoza or wonton wrappers
- 1 egg, beaten
- 1/4 cup canola oil, divided
- 1/4 cup water
Preparation
Prepare Florida Orange Ponzu Sauce; Place all ingredients in bowl; mix thoroughly to combine and reserve.
Prepare Sausage Filling; Place all ingredients in large bowl; mix thoroughly to combine.
To assemble, place dumpling wrappers flat on a lightly floured surface. Place about 1 tablespoon of Sausage Filling in the center of each wrapper. Lightly brush the area around the filling with beaten egg. Fold the wrapper in half and press edges between two fingers to seal. Place on a well-floured plate; cover with a damp towel.
Heat 2 tablespoons canola oil in nonstick sauté pan over medium heat. Sauté half of dumplings until light brown on both sides. Remove and sauté second half of dumplings in remaining 2 tablespoons oil. Return all dumplings to pan; carefully add 1/4 cup water and cover tightly with lid. Cook until water evaporates, checking often so dumplings do not stick. Cut 1 dumpling in half; test to see if Sausage Filling is thoroughly cooked in center. If dumplings are not fully cooked, add a few tablespoons water and continue cooking for several minutes or until done. Serve immediately with Florida Orange Ponzu Sauce.
