Ingredients
- 1 tablespoon extra virgin olive oil
- ½ cup (4 ounces) diced pancetta
- 3 green onions, sliced
- 1 clove garlic, minced
- 1 cup uncooked orzo pasta
- 1 cup 100% Florida orange juice
- 1 cup chicken broth
- 1 tablespoon orange zest
- ½ teaspoon coarse salt
- ½ teaspoon black pepper
- ¼ cup shredded Parmesan cheese
- Green onions, sliced for garnish, optional
- Parmesan cheese, optional
Preparation
In large saucepan, heat oil; add pancetta, onions and garlic, cook and stir over medium heat until pancetta is browned. Stir in orzo; add orange juice, chicken broth, orange zest, salt and pepper. Bring to boil; cover and reduce heat to low. Cook for about 10 minutes, stirring occasionally. Remove from heat; stir in Parmesan cheese. Garnish with green onions and additional Parmesan cheese, if desired.
