Ingredients
- 1 ripe avocado
- 1 (13.5 ounce) can unsweetened coconut milk
- 1 cup (240 ml) 100% Florida orange juice
- ½ cup plain Greek yogurt
- 1 tablespoon grated fresh ginger
- Juice of half a lime
- Salt and pepper to taste
- Chopped cilantro for garnish
Preparation
Place avocado, coconut milk, orange juice, yogurt, ginger, lime juice, salt, and pepper into a food processor or blender and process until very smooth and creamy. If mixture is too thick, add a bit more orange juice or water. Serve garnished with cilantro and red onion.
