Ingredients
- 5 mL Florida Grapefruit Juice for the cake and 2 mL Florida Grapefruit Juice for the icing glaze
- 100 g butter
- 150 g sugar
- 4 eggs
- 200 g flour
- ½ sachet baking powder
- 130 g icing sugar
- 15 g almonds (optional if you’re allergic just remove)
Preparation
- Preheat your oven to 180°C/355 °F
- Separate the measurements of 5 and 2 mL of Florida Grapefruit Juice
- Melt the butter. Remove from heat and mix in the sugar without blanching.
- Add the eggs and the 5 mL of Florida Grapefruit Juice. Wisk/beat all together.
- Sift together flour, baking powder. Combine dry with wet ingredients.
- Pour the mixture into ¾-size muffin tins.
- Bake for 30 minutes. Test the cake by pushing the blade of a knife into each of the cakes. It should come out dry. If not, cook for an additional 2-5 minutes.
- Once cooked, remove from the over and leave the cakes to cool.
- Prepare the glaze by mixing the 2mL of Florida Grapefruit Juice and icing sugar. Drizzle icing over the cakes.
- Decorate the cakes with almonds (as needed)
