Ingredients
- 50 g grilled chicken breast
(time saver: use skinless rotisserie chicken)* - 2 tablespoons shredded Parmesan cheese*
- 2 tablespoons chopped fresh basil
- 2 corn tortillas
For grapefruit vinaigrette:
- 2 tablespoons 100% Florida grapefruit juice
- 2 teaspoons olive oil
- 1 teaspoon Dijon mustard
- 1 teaspoon honey or 100% maple syrup
- Dash of cayenne pepper
- 100 grams mixed salad greens
- 1 carrot, shredded
Preparation
Put chicken, cheese and basil in tortillas; serve warm or room temperature.Whisk grapefruit juice, oil, mustard, honey and cayenne.Toss with greens and carrots.
*Vegetarian/vegan:Swap chicken for 85 g grilled tofu (about 1/4 package); swap cheese for 2 tablespoons hummus.
