Ingredients
- 3 Florida Grapefruit, zest for pancakes
- 100g Caster sugar
- 300g self-raising flour
- 2 large free range eggs
- 300ml milk (approximately)
- 1 tbsp honey
- Greek yogurt, spoonful
Preparation
- Cut the top and bottom off the Florida Grapefruit, then slice the outer skin from the fruit.
- Cut the fruit into slices and place into a frying pan with the sugar on a low heat.
- Leave the sugar to dissolve as it heats up and simmer for 10 minutes.
- Meanwhile, to make the pancakes, place the flour, eggs, milk, and honey into a mixing bowl and whisk together to form a thick batter that can pour.
- Pre-heat a non-stick frying pan and add just a little oil. Pour some of the pancake mix directly into the centre of the pan and let it spread to form a pancake.
- Cook for 1-2 minutes on each side.
- Repeat the process until you have cooked all of the pancakes, then serve with the caramelised Florida Grapefruit and a spoonful of Greek yogurt.
