Florida Orange and Grapefruit Duel: Spiced orange fritters in grapefruit Niagara honey syrup, orange carrot jam, grimo heartnuts, grapefruit caramel & aromatic spiced chai
2 Tbs white vinegar
¼ cup Organic meadows milk, 2%
2 Tbs shortening
½ cup sugar
1/2 cup milk powder
1/2 cup Red fife wheat flour
1 cup flour, all purpose
½ tsp baking powder
¼ tsp salt
1 Tbs Arvinda’s Chai spice blend
1 Florida orange, micro-planed
4 oz Florida grapefruit - juice
5oz Niagara honey
8 oz simple syrup
2 Florida grapefruit – segmented, diced
2 carrots, large – peeled and grated
8 oz Florida orange juice
6 oz condensed milk
8oz Florida grapefruit juice
4 cups water, boiling
4 Tbs tea, leaf
Stir the vinegar into milk and let stand for a few minutes until thick. In a medium bowl, cream together the shortening and sugar until smooth. Beat in the egg until well blended. Sift together the milk powder, flours, baking powder and salt. Stir into the sugar mixture alternating with the milk. Stir the spice mix and orange zest, forming a dough. Roll into balls, approximately 18 pieces. Fry at 350°F until golden brown. Drain on paper towel.
In a pan, mix juice, honey and syrup together. Bring to a boil and add segments. Toss fritters in warm syrup.
In a sauce pan mix all ingredients together and cook over medium heat until a sauce like consistency is achieved – about 20 minutes.
Heat sugar in a small pan until caramel stage. Deglaze with grapefruit juice.
Steep tea and aromatics in water for 10 minutes.
