With a hint of smokiness and a fresh zing of Florida orange juice and Florida grapefruit juice this seafood cocktail is perfect to serve up as a first course to an entertaining menu.

Ingredients:
1 tbsp (15 mL) canola oil
3 cloves garlic, minced
1/3 cup (75 mL) finely diced red onion
1/2 tsp (2 mL) smoked paprika
8 oz (250 g) raw shrimp, peeled, deveined and chopped
1 pkg (7 oz/200 g) frozen snow crab, thawed and squeezed dry
1/3 cup (75 mL) each Florida orange juice and grapefruit juice
1/4 cup (50 mL) chopped fresh coriander
2 tbsp (25 mL) finely diced red pepper (optional)
Hot pepper sauce (to taste)
Pinch salt
2 cups (500 mL) mixed greens
Directions:
In skillet, heat oil over medium heat and cook onion, garlic and paprika for 2 minutes. Add shrimp, crab, Florida orange juice and Florida grapefruit juice; simmer for about 4 minutes or until juices are absorbed.
Stir in coriander, red pepper, hot pepper sauce to taste and salt. Cover and refrigerate for at least 1 hour or up to overnight.
Divide greens among 6 martini glasses and spoon seafood mixture over top to serve.
Makes 6 servings.
Serving Options: Omit mixed greens and serve seafood cocktail on Asian soup spoons or Belgian endive leaves for an easy pick up appetizer.
Tip: If you can’t find snow crab use pasteurized fresh crab. You will need about 1 cup (250 mL).
