Donuts with Grapefruit Caramel and Orange Cream

Ingredients:
2 tbsp white vinegar
3/8 cup milk
2 tbsp shortening
1/2 white sugar
1 egg
1/2 vanilla extract
2 cups sifted all purpose flour
1/2 baking soda
1/4 tsp salt
Zest of one orange
1/2 tsp cardamom
4 cups white sugar, 1 teaspoon cardamom for dusting
Grapefruit caramel
¾ cup sugar
2 cups Florida ruby red grapefruit juiceOrange cream
300 g mascarpone
Zest of one orange
8 oz Florida orange juice and 1/4 cup maple syrup reduced
1 cup 35% cream whippedPistachios
3 oz pistachios
Garnish
2 orange fillets, 2 grapefruit fillets, fresh basil sprigs
Directions:
Donuts
In a mixer, cream sugar with shortening. Add the egg and vanilla. Add the dry ingredients, roll out dough and cut into donuts, deep fry till golden, dust with sugar and cardamom.
Florida grapefruit caramel
Caramelize the sugar in a pan, add the 100% Florida grapefruit juice and allow to reduce.
Orange cream
Cool the orange reduction and fold into the whipped cream and mascarpone, add the orange zest.
