Chicken with Spicy Grapefruit
2 Florida grapefruits
1 tbsp. extra virgin olive oil
2 thai chilies, minced
½ cup crème fraiche
1 tbsp. miso paste
1 tbsp fresh lime juice
4 x 6 oz. chicken breasts, pounded ½ inch thick
salt and pepper
4 cups frisee lettuce, torn into bite size pieces
1.Using a sharp knife, peel the grapefruits, removing all of the white pith.
2.Working over a bowl, cut between the membranes to release the grapefruit sections.
3.Add 1 tbsp. of the oil and one of the chilies. Set aside.
4.Preheat broiler or grill. In a small bowl, whisk the crème fraiche with the remaining chili, miso paste and lime juice.
5.Brush the chicken breasts with olive oil and season with salt and pepper. Grill or broil until lightly charred and just cooked, about three minutes per side.
6.Mound frisee on plates. Set chicken breast on top. Drizzle crème fraiche miso sauce over chicken and around the plates.
7.Scatter spicy grapefruit next to chicken and serve. Serves 4.
