Florida Grapefruit-Cardamom Lassi
1 cup Florida orange juice
1 cup Florida grapefruit juice
cup sparkling white wine (Prosecco or Champagne) *optional, can be substituted with sparkling water
1½ cups yogurt (low fat, thick yogurt, Greek preferably)
½ tsp cardamom (ground) *ideal to use green cardamom, remove seeds from husk and grind using pestle & mortar, then discard husks
1 tsp grapefruit zest
1 tsp orange zest
½ tsp lime zest
2 Florida oranges – peeled, segmented, pith removed
2 Florida red grapefruit – peeled, segmented, pith removed
1 tbsp honey
Using a medium stainless steel bowl, mix juices and sparkling wine together. Freeze juices in bowl for 3 hours or overnight. Once frozen, remove and scrape frozen juice mixture with fork to create ice crystals. Place crystals back in freezer while completing remainder of recipe.
Using a small bowl, mix yogurt, cardamom and zests together and let sit for 10 minutes.
Peel and segment oranges and grapefruit. Cut sections of fruit in half. Mix with honey and set aside.
Using a cocktail glass (rock or high ball), layer 3 tbsps of fruit mixture in bottom.
Evenly spoon 2 heaping tbsps of yogurt mixture on top of fruit. Gently tap glass on counter to set yogurt evenly over fruit. Spoon 4 tbsps of frozen juice ice on top of yogurt. Serve immediately with long spoons.
